&lt;p&gt;so, last week, I was really sick for quite some time, and nothing really sounded appealing to me other than rice. after bowl after bowl of plain rice, I decided to spice things up. I was also really lazy and did all of my cooking in my microwave. yay!&lt;/p&gt;

&lt;p&gt;just a commentary on rice, arborio is THE BEST RICE EVER. it’s so absorbent and makes any dish delicious and starched up and wonderful. mmm…&lt;/p&gt;

&lt;p&gt;1st picture: lentil/rice medley with tomatoes, cumin, tumeric, paprika&lt;/p&gt;
&lt;p&gt;2nd picture: rice pudding, cooked in milk, spiced with cinnamon, sweetened with honey, plus almonds and raisins.&lt;/p&gt;
&lt;p&gt;3rd picture: rice&amp;cheese, which was rice, butter, cheddar, an egg (I was being experimental?), and a bit of salt.&lt;/p&gt;
&lt;p&gt;4th picture: rice and green beans - green beans cooked in the bowl with paprika, then rice added, plus a bit of extra spice for garnish.&lt;/p&gt;

&lt;p&gt;I made this dish probably two weeks ago. it was all cooked in the microwave, cooking the green beans first until the water was boiling, then adding the couscous, then mixing in the tomato for the last minute of cooking so the flavor could soak in. it was really great. (I love green beans.)&lt;/p&gt;

&lt;p&gt;I will be posting more shortly. I’ve been a bit sick, and in Wisconsin, and errywhere, and with midterms, SO hopefully things will lighten up soon.&lt;/p&gt;

&lt;p&gt;the first dish, shown above, is even better when mixed with some simple marinara sauce and reheated. it is:&lt;/p&gt;
&lt;p&gt;- roasted red tomatoes, spinach, tofu, and garlic sautéed in olive oil&lt;/p&gt;
&lt;p&gt;- whole wheat linguine, al dente&lt;/p&gt;
&lt;p&gt;- oregano and basil&lt;/p&gt;

&lt;p&gt;the second picture IS THE BEST FOCACCIA EVER. seriously. I bought it today at a (wonderful) farmer’s market on campus and I ate half of that big block already. SOOOO GOOD.&lt;/p&gt;

&lt;p&gt;I made other noms today (trying to use up produce wahhh) but I will definitely post more pictures of the delicious items I bought today :)&lt;/p&gt;


&lt;p&gt;p.s. great idea for vinaigrette: &lt;/p&gt;
&lt;p&gt;- 3 tbsp. evoo&lt;/p&gt;

&lt;p&gt;so, I haven’t posted in a while because:&lt;/p&gt;
&lt;p&gt;1. my academic life has been ridiculously hectic and&lt;/p&gt;
&lt;p&gt;2. I’ve been running out of fresh veggies and&lt;/p&gt;
&lt;p&gt;3. my trackpad keeps spazzing out on my, so doing anything on my own computer has become extremely aggravating…&lt;/p&gt;
&lt;p&gt;that being said, I’m happy to announce that I restocked with some veggies (yay!) and am posting more things now, and there will be more pictures/unique noms to come. (I’m thinking something with roasted tomatoes, spinach, and tofu for dinner tomorrow.)&lt;/p&gt;
&lt;p&gt;the three pictures above reflect my weekend experiments with cooking a lot of stuff in the microwave. the leftmost picture was WONDERFUL. it was…&lt;/p&gt;
&lt;p&gt;- lentil/rice medley&lt;/p&gt;
&lt;p&gt;- basil pesto&lt;/p&gt;
&lt;p&gt;- 1 egg (cooked in the bowl after the lentils are done)&lt;/p&gt;
&lt;p&gt;- (the second time I made this over the weekend, I added some dijon mustard and cumin. it was delicious.)&lt;/p&gt;
&lt;p&gt;- a bit of cheddar&lt;/p&gt;
&lt;p&gt;seriously, that was a treat, and extremely hearty.&lt;/p&gt;
&lt;p&gt;the middle picture was RIDICULOUSLY NOM. I had a chocolate craving, so I made CHOCOLATE OATMEAL OMNOMNOMNOM.&lt;/p&gt;
&lt;p&gt;- oatmeal cooked in milk&lt;/p&gt;
&lt;p&gt;- honey&lt;/p&gt;
&lt;p&gt;- dark chocolate&lt;/p&gt;
&lt;p&gt;- sugar sprinkled on top :):)&lt;/p&gt;
&lt;p&gt;encouraged by my earlier success with eggs in the microwave, I attempted to cook them on their own on a plate… to not-so-pretty (or awesome) results. eh. win some, lose some. I wanted to use up some of my leftover smoked salmon, and since it was so salty I thought I’d use it as the seasoning for some sunday-morning eggs (placed on after the eggs were done). I don’t think I’ll be cooking eggs straight on a plate again.&lt;/p&gt;
&lt;p&gt;the dishes from these meals are on my desk right now. also, after just refilling my water filter on friday (it’s a multi-galon thing), it’s totally empty. FEH. CHORESZ.&lt;/p&gt;
&lt;p&gt;also, not to cram this post with a million announcements, but I’ve been reading a vegan cookbook lately. I don’t know if I’m convinced on veganism, but I can definitely go for a few vegetarian days a week (easily) and making sure to buy my produce organically, especially produce with thinner skin. (pesticides are nasty.) I bought some honeycrisp apples WHICH ARE MY FAVORITE FRUIT EVER from whole foods yesterday and plan to devour the rest of them in the coming days. omnomnomnom. also I got more raspberries :):)&lt;/p&gt;

I took the veggie “pasta” from last night and mixed it with fresh couscous (cooked correctly, which is surprisingly easy to do in my microwave) and a bit of grated sharp cheddar on top. I know… feta would have been more appropriate, but I was in one of those I-need-comfort-carbs-and-cheddar moods. you know what I’m saying? …probably not.&lt;/p&gt;

&lt;p&gt;well, it was both yummy, and delicious, and somewhat good for me (the veggies were at least). I tend to have a natural resistance to red peppers/peppers in general, but I’m trying to incorporate them into dishes where they fit well.&lt;/p&gt;

I took a potato peeler and ran it along 1/2 a zucchini and a butternut squash, making little pasta-like veggie strands. I sautéed a roasted red pepper in extra-virgin olive oil and then tossed the squash-pasta in and cooked them for about 5 minutes. I spiced it with a bit of oregano (which actually worked well). it was a satisfying meal.&lt;/p&gt;

I think it turned out pretty well, considering my hair-cutting experience has been limited to my bangs, my boyfriend, and my mom when I was 8.&lt;/p&gt;

&lt;p&gt;- some milk (to thicken the pudding as it cooks)&lt;/p&gt;

I got mushy couscous, but I think I’m going to do something with it later (i.e. cook it more and make a sort of rice-pudding type thingy). &lt;/p&gt;
&lt;p&gt;my recipe:&lt;/p&gt;
&lt;p&gt;- VEGGIES: 1/2 zucchini, 1 red potato, 8 baby carrots, 1/2 onion, 2 cloves garlic, 1 can diced tomatoes&lt;/p&gt;
&lt;p&gt;- SPICES: cinnamon and cumin (to put in the couscous-water), paprika &lt;/p&gt;
&lt;p&gt;I like to cook veggies in evoo, and I always put garlic in, then onions (if I’m using any). at this step, I put in the paprika to give the translucent onions a beautiful red color. I then added the other veggies, and after briefly browning them covered them in the tomato sauce and let cook covered for around 20 minutes, stirring occasionally. the veggies turned out soooo good, especially the zucchini.&lt;/p&gt;

&lt;p&gt;I made a cool kind of curly pasta (forgot the name sowwy) with a homemade rosa sauce (although it really turned out more like a chunky ragout). the sauce was:&lt;/p&gt;
&lt;p&gt;- 1 can diced tomatoes&lt;/p&gt;
&lt;p&gt;- 3 cloves garlic&lt;/p&gt;
&lt;p&gt;- 2 chicken-sausages with spinach and feta&lt;/p&gt;
&lt;p&gt;- a lot of spinach&lt;/p&gt;
&lt;p&gt;- 1/2 a pack of baby bella mushrooms&lt;/p&gt;
&lt;p&gt;- evoo and butter (for the creaminess)&lt;/p&gt;
&lt;p&gt;- red pepper flakes, basil, oregano, and salt to taste&lt;/p&gt;
&lt;p&gt;topped off with some fresh grated parmesan.&lt;/p&gt;
&lt;p&gt;it was quite nom. and I am quite full. I’m also about to try going to the gym. feh.&lt;/p&gt;
